Never Claim To Be A Chef

Did you notice that there is an increasing amount of cooking shows on the tube? I thought we were all trying to shade a couple extra pounds. All those cooking and food certainly doesn’t help. Who are all these celebrity chefs anyway? New one pops up all the time.

I was never interested in a career with an average office temperature close to a 100º, However I do like the idea of messing around in the kitchen once in a while. I found that cooking is rather relaxing not to mention love cooking with wine have a glass along the way. So Ms Julie, I did take notes…

I look at cooking as a creative process, ingredients are my paints, cook ware are my canvas. I can mix and matches to create, there is no right or wrong direction, in the end you may have a creation good for the eyes only, or may be something good for the taste as well.

With that in mind, I am attempting to share one of my own creation that is easy to use, and guarantee good for most meat dishes that you ever cook.
The idea is simple. I borrowed from the French’s method of brining the meat. The ingredients for the brine are: Chicken bones, leaks, onions, carrots, celeries, a couple coves of fresh garlic, bay Leaves, a tea spoon of oregano, fresh basil, a couple slices of ginger pressed, salt & pepper to taste. Put all the ingredients in a soup pot, fill water to ¾ full, bring to boil, simmer until reduce to half.

Remove brine from heat, add half a cup of white wine not the expensive one that you are drinking, cooking wine is fine, set aside and lets cool. When cold, add raw meat cover pot and refrigerate over night. Your main course is ready for grilling or fry. No other sauce is needed for the finishing touch.
